One Potato-Two Potato

One Potato Two Potato

1 large sweet potato diced in 1" cubes

1 large russet potato diced in 1" cubes

2 T butter

1/2 med onion

2 stalks of celery diced

2 carrots diced

1/4 t cayenne pepper

1/4 t chipotle pepper

1 T flour

1 package of chicken broth

1/2 cup milk or cream

3 slices of applewood bacon for garnish

1/2 cup of shredded cheese for garnish

4 green onions for garnish

Boil potatoes until fork tender

In skillet cook onions, celery carrots in butter until tender

Sprinkle in flour and stir around

Slowly pour in 1/2 c of broth until it starts to thicken

Slowly add milk or cream and rest of broth.

Puree in blender until smooth 

Serve in bowl with desired garnish.
