I do love the rain as we don't see enough of it here in the desert but this week we got a wee bit of Liquid sunshine.
Butternut Squash and Sausage

Roasted Butternut Squash Soup With Sausage
2 medium sized butternut squash cut in half lengthwise
2 large carrots cut into medium sized pieces
1 large onion quartered
4 cloves garlic
1 Tablespoon coconut oil
3/4 teaspoon salt
1/2 teaspoon pepper
1 pound sage sausage
4 cups chicken broth
1/2 teaspoon cinnamon
1/2 teaspoon grated ginger
1 bay leaf
Preheat oven to 400 degrees
Grease baking sheet with oil and place squash face down. Add carrots and onions around squash.
Roast vegetable 35min or until squash skin has puckered.
Brown sausage in skillet along with fresh sage, sat aside
Scoop out squash from skin and put in a blender along with onions, carrots and garlic. Puree until smooth. Add mixture to a big pot, add chicken stock along with cooked sausage simmer for 10 min.
You can serve with a garnish of crumbled bacon, truffle oil and fresh sage. I didn't do any of this but it does sound pretty good.
