Two of my favorite people in the Pacific Northwest went fishing in a very public place the Pike's Place Market for salmon. When I visited them last month, Brian, Carol's husband fixed the most wonderful King Salmon for me and low and behold I received a special care package from these two friends.
So what is a girl to do but to text her daughter and ask if they want to come to dinner on Saturday night. The above image really does not give the scope of the size of this lovely fish because this will provide me with a good 6 meals plus the one I will serve my family. The beginnings of a Big Meal.
No good meal can start at my house without the thoughts of desert, that is this southern girls way. So my thoughts ran to PIE and it is summer and Blueberry, Peach was going to do it. Recipe will follow at the end.
Blueberry Peach Pie
Store bought pie crust because I am easy and because they are good. 2 to a package, combine the two to make one crust for one big pie for cast iron skillet.
1 1/2 fresh peach, skin on chopped
3 cups of blueberries
3 tablespoons flour
3/4 cup sugar or less, taste depends on how sweet the peaches are
1 teaspoon lemon rind
1 to 2 teaspoons lemon juice fresh
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Fold to mix and put in skillet with crust
Dot with chunks of butter and fold crust in around the pie and bake at 400 degrees for 45 min. or until bubbly and brown on the edges.
Now that the pie was made time for a little appetizer which was going to be simple, grilled sour dough bread brushed in butter with fresh tomatoes, basil and drizzle of balsamic glaze. Enough said.....Then the meal of Spicy Noodles (aka Carol Hart's recipe) simple green salad.
